This is what the Fabbri family have been drinking at home since the 1780s. Essentially our ‘house’ red, Savignola Paolina’s Rosso is Sangiovese in a sunny mood – medium in body but with enough gusto to hold its own against most meat dishes.

A complex and thought-provoking organic Vernaccia, offering a white-gold colour, great mouthfeel and running the spectrum of flavours from apple and ginger to pine nut and bay leaf. A ridiculously well-made wine.

Appellation rules in San Gimignano dictate that the name of the grape variety, in this case Viognier, cannot appear on the label. A clever bit of word play later, and you have Vi Ogni è, which also, handily, translates loosely as ‘it has everything’.

If all Chianti were like this, the world would be a better place. Many weird and wonderful things have been done with Sangiovese, but, when you strip off the pretensions, it makes wine that is enjoyable, satisfying, and, in this case, very, very classy.

It may be named after an unfortunate accident that befell the family dog, but, thankfully, there’s nothing unfortunate about this IGT. Beautifully rounded, lively, and complex with colourful christmas-candied fruit notes resting their haunches on a bed of smoke and damsons.

Jarkko Peränen doesn’t believe in grading his Classico wines. This means that, whilst other producers will put the pick of the crop aside, destined to become a pricier riserva, all efforts here are focused on producing this, the flagship expression from Candialle.
